Almost the whole
of Spanish cuisine is present in the tapas of Madrid.
Excellent seafood, Iberian ham and sausages, assorted
pickles, native dishes such as prawns in batter, Madrid-style
tripe, or snails, smoked meats and fish and excellent cheeses
such as Manchego cheese, made of sheep´s milk,
perhaps the most popular cheese in Spain. Other dishes
include cocktail stick snacks and casseroles, these in addition
to the numerous local wines help to make Madrid the
tapas capital of Spain.
